Chuck Roll is a large, boneless cut from between the ribs and backbone. Contains a mix of tender and somewhat tough muscles, which are fabricated into smaller cuts of:

  • Chuck Roast

  • Delmonico also known as the Chuck Eye Roll

  • Denver Steak also known as the Chuck Under Blade, Chuck Flap, boneless short rib, or Zabuton japanese for "little pillow." 

  • Stew Meat - good flavor, but is not very tender, so it's best cooked slowly with moist heat (braising, stewing, etc)
