Capicola, also known as capocollo, coppa, or gabagool, is an Italian cold cut of dry-cured pork that comes from the neck and shoulder region of the pig. It's typically sliced thinly and can be eaten on sandwiches, charcuterie boards, or on its own

At Local Pig we use sustainably sourced hogs that haven't been fed any antibiotics or hormones and our capicola is cured for days then hot smoked.
