Slow braising cuts or organs (also known as offal):

• Short Rib - slow cooked with braising or smoking. taken from the brisket, chuck, plate, or rib areas of beef cattle. They consist of a short portion of the rib bone and the surrounding meat, which varies in thickness

• Osso Bucco - cross cut of the beef shank

• Heart - muscle meat, just like your favorite cut of steak. In fact, The taste and texture are far closer to steak than organs.  Much like flank steak, for it to be tender, you’ve got to cook heart either really slow or really fast.
